If you are trying to be on a no added sugar diet, but you crave something sweet, this dessert is just for you. Tapioca cooked in a naturally sweet milk served with fried bananas and berries.

No Sugar Desserts – Do They Even Exist?

Sometimes I envy people who don’t like sweets (yes, there are such people ;)). I think my life would be so much easier and healthier then. No internal fights with myself if I should have (or why I shouldn’t have) another piece of cake. No so-difficult-to-keep promises that I will eat chocolate only once per week.

But I do love sweets, and I guess for the rest of my life I will have to look for the answer to the eternal conundrum of how to eat the cake (or dessert or chocolate) and have the cake (i.e., have a generally healthy diet).

So far, I have found different ways of dealing with this issue. For example, in my cakes or desserts, I swap butter for oil or avocado. Instead of regular flour, I use wholemeal or quinoa. Additionally, whenever possible, I decrease the amount of sugar I use in my recipes.

However, I never thought about making a dessert without sugar at all. Everything changed when a few weeks ago my daughter and her friend set a challenge for themselves.

 

Banana Tapioca Pudding – Dessert Without Added Sugar

They wanted to check who could stay longer on a no added sugar diet. My daughter was doing very well for a few days. But as you can imagine a moment came when she was craving for something sweet other than fruit.

As a good mother, I wanted to help my daughter and came up with a recipe for sweet but no sugar desserts – Banana Tapioca Pudding.

I cooked the tapioca in almond and rice milk that is naturally sweet (almond or coconut milk would work as well). To add more sweetness to the dessert, I used very ripe bananas that I additionally fried to enhance the taste.

This Banana Tapioca Pudding – a dessert without sugar turned out to be so sweet that I even had to add some tart raspberries to balance the flavour.

 



Banana Tapioca Pudding - No Sugar Desserts

Vegan tapioca dessert, sweet and delightful even though there is no added sugar in it.

Ingredients
  

  • 1 l almond and rice milk
  • 130 g tapioca (small pearls)
  • 1 cinnamon stick
  • 1 tsp butter
  • 4 very ripe bananas sliced
  • 1 pinch cinnamon
  • raspberries and blueberries, for decoration

Instructions
 

  • Boil the milk with the cinnamon stick; add the tapioca pearls.
  • Cook on medium heat stirring occasionally (more often in the last 10 minutes) for approx. 25 minutes until the pearls are completely translucent.
  • In a small frying pan melt the butter, add the bananas and a pinch of cinnamon and fry for 3-4 minutes.
  • Divide the tapioca and fried banana between 4 serving jars or glasses by arranging them in the following way in each glass: put a layer of tapioca and layer of fried bananas, repeat and top up with fruit.
