Smoked Salmon and Tomato Salad – a Perfect Combination of Oily Fish and Tangy Additions

 

When I want to have something light to eat in the dark winter months, I usually choose hearty soups. They have this wonderful ability to warm me up just after I have the first few spoonfuls.

Additionally, soups are, in general, healthy and filling. This means I will probably not be tempted to eat anything else soon after. But even in winter, I do fancy salads from time to time.

However, they must have a few important characteristics.

The below recipe for Smoked Salmon and Tomato Salad is, in my opinion, a great winter option.

It is light but, thanks to the smoked salmon, substantial enough to keep you going for a few hours without feeling hungry.

The tomatoes, capers and lemony, slightly spicy dressing balance out the oily fish. This means that you end up with a pretty refreshing and very delicious salad. And you will need only about 10 minutes to make it.

This Smoked Salmon and Tomato Salad has also another great advantage.

On one hand, it looks impressive so you can easily serve it at any dinner party as a starter. But on the other hand, it is equally perfect if you just want to quickly throw together a simple salad for your family.

And the fact that it requires very few ingredients is just the cherry on top.

To be honest, you can also easily add or take away some ingredients depending on your personal preferences.

Some members of my family, for example, like neither capers nor sundried tomatoes. So when I make this dish for them, I simply omit these components. But they still enjoy it tremendously!

I don’t know about you but I can’t think of a better (winter) salad 😉

 

 

Smoked Salmon and Tomato Salad

Ingredients
  

Salad:

  • 50 g rocket
  • 150 g cherry tomatoes cut in halves or quarters, if bigger,
  • 40 g sundried tomatoes cut into strips,
  • 150 g hot-smoked salmon flaked,
  • 1 tbsp capers
  • 2 tbsp radish sprouts
  • salt and pepper.

Dressing:

  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tsp sweet chilli sauce

Instructions
 

  • Arrange on two plates the salad ingredients.
  • Mix the olive oil, lemon juice and sweet chilli sauce in a small bowl till combined to make a dressing and pour over the salad, season.
